Use Either Leftover Pulled Pork or Smoke Your Pork From Scratch
Whether you have a whole pork butt ready to smoke, store-bought pulled pork, or leftover pulled pork or this pumpkin spiced pulled pork recipe you can use that to make this dish!
There’s absolutely nothing wrong with making pulled pork sandwiches with your leftover meat. But it can get a little boring after a while. Instead, you should use your shredded meat to make your nachos more delicious.
How to Make Pulled Pork Nachos
The great thing about this recipe is that you can use your oven, grill, smoker, or microwave.
Step 1: Preheat Your Grill or Oven
Go ahead and preheat your oven or grill to 400 ℉. Then take a baking tray and line it with a baking sheet.
You could also use a nonstick baking mat. We love using a glass oven tray and just spaying it with some cooking spray, to prevent things from sticking.
Step 2: How to Layer Nachos
Open the packet of tortilla chips and pour out about half of the bag into the tray.
Spread the chips out. Split your ingredients in half. Sprinkle half of the shredded cheese, slow-cooked pulled pork, and black beans onto the layer of tortilla chips. Then follow that up with the jalapeño slices and yellow peppers and then repeat.
Step 3: Place The Nachos on The Grill
Place the whole tray onto the grill or into the oven to bake for 6 minutes or until you see the cheese melt.
Step 4: Add Your Garnishes
Take the nachos out and place them on the rest of the toppings and garnish. Then serve the dish while it’s still hot. You want to be able to do the satisfying cheese pull!
Smoking or Slow Cooking Your Pork
Making this dish entirely from scratch? Then you’re going to want to start by slow cooking a (3-pound) boneless pork shoulder or butt.
Do this by seasoning it with salt and pepper. Then, you’ll want to put it into your slow cooker pot or smoker
We would suggest using some chili powder, cumin powder, garlic, and oregano as seasoning. But feel free to use whatever you want.
Once the pork as reached an internal temperature of at least 195 degrees, you can just take it out of the smoker or slow cooker pot and shred it using two forks.Or you can even use meat shredding claws for faster and more consistent results.

How to Shred Your Pork
Pulling pork may seem like a simple process. But I dare you to say that to a professional pit master!
Cooked meat requires care and control. Below are the two ways I like to shred pork.
Using Your Hands
- Allow the meat to rest until it’s cool enough to handle, then put on cooking gloves.
- Place the pork on a clean, chopping board.
- Remove the fat cap, then using your hands tears it into smaller pieces and then cover with foil in a pan.
- Add the cooking liquid place to the pan along with a dash of apple cider vinegar and BBQ sauce
Using Bear Claws
Bear claws make this task efficient and effortless, allowing you to prepare pulled pork quickly and with ease.
- First, cook the pork until tender. then, wearing the claws, grip the meat firmly and start pulling in opposite directions.
- Continue shredding the meat until you achieve your desired consistency.
Using Leftover Pulled Pork?
You just need 2 cups of pulled pork to make this dish.
If it’s a bit dry from being in the fridge add some more BBQ sauce, apple juice, or beer!
