What You Need 

Pork chops: Choose boneless pork chops for easier preparation and to avoid the hassle of removing the bone. Look for pork chops that are about 1 inch thick for even cooking.

Yellow mustard: Mustard adds a tangy flavor that complements the savory ingredients in the stuffing. You can use any mustard, but yellow mustard is a classic choice.

Barbecue rub: Use your favorite barbecue rub or create your blend. A good barbecue rub will add a smoky, sweet, and savory flavor to the pork chops.

Shredded cheese: Choose a cheese that melts well and complements the flavors of the other ingredients. Cheddar, gouda, and pepperjack are all good options.

Diced bacon: Bacon adds a salty, crispy texture and a rich flavor to the stuffing. You can use pre-cooked bacon or cook your own.

Cilantro: 

Butcher’s twine: Butcher’s twine secures the stuffed pork chops and prevents the stuffing from falling out during cooking.  

How to Make Baked Stuffed Pork Chops

Prepare the Pork Chops

Butterfly-cut each pork chop to create a deep pocket for stuffing. Rub yellow mustard evenly over both sides, then generously coat the chops with barbecue rub or your favorite seasoning, ensuring full coverage.

Make the Stuffing

In a bowl, mix shredded cheese, crumbled crispy bacon, cilantro, and 1 tablespoon of barbecue rub.

Stuff the Pork Chops

Carefully fill each pork chop pocket with the stuffing mixture. Secure the chops with kitchen twine to keep everything in place.

Bake the Pork Chops

Place the stuffed pork chops on a lined cookie sheet or in a prepared baking dish. Bake at 400°F (200°C) for 18-20 minutes or until the internal temperature reaches 145°F (63°C).

Storing Leftovers

Place leftover stuffed pork chops in an airtight container and refrigerate for up to 3-4 days. For longer storage, freeze them in a freezer-safe container or bag for up to 3 months.

When reheating, make sure the pork chops reach an internal temperature of 165°F (74°C) for safety. Reheat refrigerated pork chops in the oven at 350°F (175°C) for 15-20 minutes, or until warmed through.

Ingredients
  

  • 2 lbs boneless pork chops 1 1/4 inch thick, loin chops
  • 2 tbsp olive oil
  • 2 tbsp barbecue rub
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • ¼ cup shredded cheese
  • ½ cup bacon diced and cooked
  • 1 tbsp yellow mustard
  • 2 tbsp barbecue rub
  • 1 tbsp cilantro chopped

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Cook bacon in a skillet until crispy. Drain on paper towels and crumble.
  • Carefully cut a pocket into the side of each pork chop (leaving the fat side intact).
  • Combine shredded cheese, crumbled bacon, cilantro, and 1 tbsp barbecue rub.
  • Fill each pork chop pocket with the stuffing. Secure with twine.
  • Salt and pepper both sides of each pork chop.
  • Coat the entire pork chop with the remaining 1 tbsp barbecue rub and yellow mustard.
  • Place the stuffed pork chops on a lined cookie sheet or in a prepared baking dish. Bake for 18-20 minutes, or until the pork chops reach an internal temperature of 145°F (63°C).
  • Let the pork chops rest for 3 minutes before serving.
