These baked stuffed pork chops are perfect for a weeknight meal or to impress for a dinner party, the best part is they take no more than 10 minutes to prep. What could be better than juicy pork stuffed with cheese and bacon!
Fill each pork chop pocket with the stuffing. Secure with twine.
Salt and pepper both sides of each pork chop.
Coat the entire pork chop with the remaining 1 tbsp barbecue rub and yellow mustard.
Place the stuffed pork chops on a lined cookie sheet or in a prepared baking dish. Bake for 18-20 minutes, or until the pork chops reach an internal temperature of 145°F (63°C).
Let the pork chops rest for 3 minutes before serving.
