Baked Stuffed Pork Chops

These baked stuffed pork chops are perfect for a weeknight meal or to impress for a dinner party, the best part is they take no more than 10 minutes to prep. What could be better than juicy pork stuffed with cheese and bacon!

Ingredients
  

  • 2 lbs boneless pork chops 1 1/4 inch thick, loin chops
  • 2 tbsp olive oil
  • 2 tbsp barbecue rub
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • ¼ cup shredded cheese
  • ½ cup bacon diced and cooked
  • 1 tbsp yellow mustard
  • 2 tbsp barbecue rub
  • 1 tbsp cilantro chopped

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Cook bacon in a skillet until crispy. Drain on paper towels and crumble.
  • Carefully cut a pocket into the side of each pork chop (leaving the fat side intact).
  • Combine shredded cheese, crumbled bacon, cilantro, and 1 tbsp barbecue rub.
  • Fill each pork chop pocket with the stuffing. Secure with twine.
  • Salt and pepper both sides of each pork chop.
  • Coat the entire pork chop with the remaining 1 tbsp barbecue rub and yellow mustard.
  • Place the stuffed pork chops on a lined cookie sheet or in a prepared baking dish. Bake for 18-20 minutes, or until the pork chops reach an internal temperature of 145°F (63°C).
  • Let the pork chops rest for 3 minutes before serving.
