What You’ll Need 

  • 2 lbs. carrots peeled and sliced diagonally
  • 3 Tbsp olive oil
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1/4 tsp paprika
  • 1 tsp garlic powder (can substitute with 2 cloves minced garlic)
  • 4 Tbsp butter sliced into tablespoon-sized slices
  • 2 – 3 Tbsp honey

How to Make This Grilled Carrots With Brown Butter Recipe

Step 1: Preheat Your Grill and Prep The Carrots 

Preheat your grill to 425°F, and set a large baking sheet aside. Peel the carrots and place them in a bowl.

Step 2: Season The Carrots 

Now, add oil, salt, pepper, thyme, paprika, and garlic powder to the bowl. Toss the bowl a couple of times to coat the carrots completely.

Step 3: Grill! 

Transfer the carrots to the grill grates and spread them into an even layer. Grill the carrots for 15 minutes. Quickly toss or flip the carrots and continue cooking for another 10-15 minutes.

Step 4: Make The Browned Butter Honey Sauce 

While carrots are roasting, add butter to a light-bottomed saucepan. Heat over medium to low heat, whisking occasionally at first. Once the butter starts to bubble and foam begins to appear around the edges, whisk continuously. Keep whisking until it gets very foamy. 

Continue cooking and whisking, and the foam subsides a bit. You should see toasty brown-colored specs at the bottom of the pan. Once this happens give it a smell, it should smell nutty and different than regular melted butter.

Remove from the heat and whisk in honey. Pour over roasted carrots and toss to combine.

Step 4: Remove From Grill And Let It Rest 

Remove carrots from the grill and set them aside. Pour the browned butter honey sauce over roasted carrots and toss to combine.

What Temperature To Cook Grilled Carrots With Brown Butter

You’ll want to roast the carrots at 425°F for the best results. 

How Long to Grill Carrots 

You’ll want to cook the carrots for 25- 30 minutes, including 15 minutes of cooking time first and another 15 minutes after flipping them. 

How To Store Leftover Grilled Carrots 

If you do have leftover grilled carrots, the best idea is to cover them in an airtight container and toss them into the refrigerator. 

When you are ready to eat them, you may toss-cook them on the stove over medium heat. You should stir and toss them constantly until they are tender and nicely glazed. This process should not take longer than 5 minutes.
