What You’ll Need to Cook Grilled Brownies
Castor sugar
Unsalted butter
Cocoa powder
Vanilla Extract
Eggs
Plain flour
Baking Powder
Fine sea salt

How to Make Grilled Brownies
Step 1: Prepare the Grill
Set up your grill for indirect cooking, aiming for a temperature between 350–400°F (180–200°C) which is medium – high.
Step 2: Prepare the Baking Pan
Line a rectangular baking pan (approximately 13 x 9 inches or 33 x 23 cm) with parchment paper. You can use a steel or disposable aluminum pan.
Step 3: Make the Brownie Batter
In a large bowl, mix melted butter and sugar until well combined. Stir in cocoa powder until smooth. Add eggs one at a time, then mix in vanilla extract. Sift flour, baking powder, and salt into the bowl, folding them into the mixture. If desired, fold in chocolate chips and nuts.

Step 4: Bake the Brownies
Pour the brownie batter into the prepared pan. Place the pan on the grill and cook for about 25 minutes or until the brownies are set.

What Temperature to Set The Grill
You’ll want to set your grill for indirect cooking at 350–400°F. This temperature range will allow the brownies to cook evenly and be left with the right hint of smokiness.
You’ll want to aim for an internal temperature of 200–210°F. The brownies should be firm at this temperature yet retain their moisture and be fudgy. To check for doneness, insert a kitchen thermometer into the center of the brownies.

You’ll want to grill the brownies for approximately 25 minutes. This time may vary slightly depending on your grill and the exact temperature, so checking for doneness around the 20-minute mark is a good idea. The brownies should be just set but still moist in the center.
How To Store Leftovers
If you end up with leftovers, ensure they are completely cooled to room temperature before storing them later.
Next, you may wrap each piece tightly in plastic or aluminum foil to prevent it from drying out and maintain freshness. Transfer the wrapped brownies to an airtight container or a resealable plastic bag and process to throw them in the refrigerator for up to 3-4 days.
