Equipment to Used for Cold Smoking Honey.
Cold smokers allow the honey to get that smoky flavor with indirect heat. There are a variety of cold smokers available for smoking honey.

Other tools that can be used for cold smoking are handheld smokers and a smoking tube.

How to Cold Smoke Honey.
The FDA suggests that cold smoking is usually done at temperatures under 140°F.
Any type of honey can be used for cold smoking. Mallee Honey is considered an all-rounder honey. Some other varieties of honey that can be used are Jarrah Honey, redgum honey, and white gum honey.
Follow these simple steps to cold-smoke honey.
Step 1: Pour the raw honey into a foil tray or a glass dish.
Step 2: Place the foil tray/glass dish on the wire racks of the cold smoker.
Step 3: Cold smoke the honey for 30 – 50 minutes and gently stir it for 20 minutes.
Step 4: Take the honey out of the smoker.
Step 5: Wrap the honey with foil and let it rest for 24 hours at room temperature.

Pro-tip.
If the honey has a strong smoky flavor, reduce the smokiness by mixing it with regular honey.
Another way to get cold-smoked honey is by mixing raw honey with liquid smoke. This is like a shortcut method as it does not require the use of a cold smoker.
Here is a Simple Cold Smoked Honey BBQ Sauce Recipe
Step 1: Heat up the cold smoker using smoking wood chips, to gather some smoke.
Step 2: In a glass dish pour in a can of tomato sauce or cayenne pepper sauce.
Step 3: Add lots of onions and garlic to the glass dish and place it in a cold smoker.
Step 4: Cold Smoke the sauce for 6-8 hours.
Step 5: Place the sauce in a pan and simmer for 5 minutes.
Step 6: Add enough amount of coarse salt or sea salt.
Step 7: Blend the sauce and return it to the pan to simmer over medium heat.
Step 7: Gradually add 10 tbsp honey and 3 tbsp apple cider vinegar to the sauce as it reduces.
Step 8: Sprinkle a pinch of salt into the sauce to balance out all the flavors.
How to Store Cold Smoked Honey.
The cold-smoked honey needs to be stored in an airtight container.
This container can be a glass mason jar or any glass jar with a lid.
The honey can be stored in the pantry with other food items. The cold-smoked honey can be stored for up to 6 months.
