What You Will Need
- Whole Cornish Hens
- Olive Oil
- Kosher Salt
- Dried Thyme
- Dried Rosemary
- Garlic Powder
- Smoked Paprika
- Black Pepper
- Optional: Lemon Wedges For Serving
How to Roast Cornish Hens
Preheat the Oven
In a small bowl, combine the kosher salt, dried thyme, rosemary, garlic powder, smoked paprika, and black pepper.
Prepare the Hens
Pat the Cornish hens dry with paper towels. This helps the seasoning stick and promotes browning. Place the hens on a baking sheet or in a roasting pan with enough space between them for even airflow.
Season the Hens
Drizzle one tablespoon of olive oil per hen and rub it over the entire surface. Combine the kosher salt, dried thyme, rosemary, garlic powder, smoked paprika, and black pepper in a small bowl. Use a meat thermometer to ensure the hens are perfectly cooked. The internal temperature should reach 165°F (74°C) in the thickest part of the thigh without touching the bone. This guarantees the meat is safe to eat and remains juicy.
After roasting, allow the hens to rest for about 10 minutes. This resting period lets the juices redistribute, making the meat tender and flavorful when served. Adjust the roasting time slightly if the hens are larger or smaller than average.
Storing Leftovers
Leftover Cornish hen meat can be stored in an airtight container in the refrigerator for 3-4 days. To reheat, place pieces in a baking dish with a small amount of chicken broth and warm in a 325°F oven for 10-15 minutes to prevent drying out.
