Everything You Need To Know About Smoked Eggs (Bonus Deviled Eggs Recipe Included)

Eggs are good for us. There is no doubt about that. They make a great snack and are really handy to have hard boiled in the fridge for those desperate times.

However, when we think of eggs, most of us don't get too excited. They are usually fairly flavourless and the only way to combat that is to drench them in salt or curry powder.

Don't worry though, I have a couple of tricks up my sleeve. Smoked eggs. It is the simple way to add a tonne of flavour to your eggs. You can even grill em!

To be honest, it's actually a lot easier than you think, let me explain how to smoke or grill eggs.

Smoked Deviled eggs

How To Cold Smoke An Egg

Place your egg/s in a pot and boil for around 11 minutes until hard boiled.

Remove from the pot and let cool, then peel.

Set up your smoker as per your manufacturer's instructions and preheat to 90 - 100°F.

Place eggs in the smoker and smoke for 1 - 1 1/2 hours or until bronzed in colour.

Refrigerate for up to  week. 

Charlies Hot Tip

Do not exceed 100°F. This will cook your eggs to fast and you will be left with a rubbery, chewy egg. The lower the temperature the better for cold smoking. 

How To Hot Smoke An Egg

Place your egg/s in a pot and boil for around 11 minutes until hard boiled.

Remove from the pot and let cool, then peel.

Set up your smoker as per your manufacturer's instructions and preheat to 225°F.

Place eggs in the smoker and smoke for 10 - 15 minutes or until bronzed in colour.

Refrigerate for up to 1 week. 

How To Cook An Egg On the Grill

You can also grill eggs, personally, I love eggs cooked on the grill when we are out camping. Its a nice change to hard boiled eggs or fried eggs.

Place your grill grate over your heat source. I find a gentle campfire is perfect for this.

Place the raw eggs on the grill grate (shell still on).

Cook the eggs for around 3 minutes per egg side. 

How To Cook An Egg On Fire Embers

In the morning if you still have embers going from the fire, a nice easy breakfast is to cook your eggs buried in the embers. To ember roast eggs all you need to do is:

Simply bury your raw eggs in the hottest part of the embers.

You can always use the spin test to test when your eggs are cooked to your preference.
Peel & eat.

My favourite way to eat them is sliced on some fire toasted crusty toast.

Cooking time does differ depending on how hot your embers are. So for a faster cook get your eggs buried first thing in the morning while the embers are still hot!

How Long To Boil An Egg

Boiling an egg is a simple task. However, there is a lot of debate over boiling times and when to place your eggs in the water.

Personally, I think that the eggs should be placed in cold water, so the eggs are covered by about 1 inch of water

Set the cooked to medium high heat and once the water has reached a steady simmer, start your timer. 

You want to maintain a steady simmer on your eggs, you don't want a rough boil. This can crack your eggs and leave you with a right rubbery mess.

Soft boiled: Your egg white is cooked and solid, however the yolk is very running. Perfect for dipping buttery toast 'soldiers' into. To eat eggs this way it is best to sit them in an egg cup and slice open with the side of a tea spoon. 

Medium boiled: As well as a cooked egg white, the yolk is solid. It should be moist but dense. Served best as above or cut in half on a salad.

Hard boiled: Both the white and the yolk are completely solid. The yolk will be light yellow and crumbly. These work best as a snack on the run or in devilled eggs. Recipe Below.

One of the easiest ways to hard boil and egg without the stress of keeping your eye on the egg timer is the 'boil and walk away' method.

This method is fantastic when you have a lot of cooking on the go or you need to have your concerntration on something else, like sports. For this method all you need to do is:

Place your eggs in cold water.

Bring to a brisk simmer.

Turn off the heat and leave eggs uncovered for at least 10 minutes and a maximum of 30 minutes.

Devilled Smoked Eggs

Ingredients

  • Salt & pepper
  • Paprika
  • Minced parsley or your favourite fresh herb
  • 2 teaspoons yellow mustard
  • 2 - 2 1/2 tablespoons mayonnaise
  • 6 large eggs

Equipment

  • Bowl of ice water
  • Dinner fork
  • Medium saucepan & lid
  • Mixing bowl
  • Sealable plastic bag
  • Sharp knife
  • Spatula

Instructions

  1. Remove the egg yolks by gently squeezing. The yolks should pop out easily in one piece.
  2. Transfer yolks into a bowl and the whites on a platter with the cut side facing up.
  3. Mash your yolks with a fork until completely crumbled.
  4. Mix in 2 tablespoons of the mayonnaise and mustard into the crumbled yolks. Mix and mash until you are left with a smooth paste. If the mixture feels too stiff add more mayonnaise and mix one teaspoon at a time until you are happy with the texture.
  5. Season with salt and pepper to taste.
  6. Using a spatula scoop the mixture into a piping bag (or plastic bag). Use a 1/2 inch round tip (or cut bag to a 1/2 inch tip in the bottom corner)
  7. Pipe the mixture into the cup section of each egg white. You want to place enough in each cup to be left with a little mound bulging out.
  8. Sprinkle with a good dusting a paprika, and fresh herbs. I also like to re-season with salt & Pepper.

See, eggs can be exciting and very, very tasty.  I love leaving a bowl of smoked eggs in the refrigerator, they are the perfect snack.
