Eggs are good for us. There is no doubt about that. They make a great snack and are really handy to have hard boiled in the fridge for those desperate times.
However, when we think of eggs, most of us don't get too excited. They are usually fairly flavourless and the only way to combat that is to drench them in salt or curry powder.
Don't worry though, I have a couple of tricks up my sleeve. Smoked eggs. It is the simple way to add a tonne of flavour to your eggs. You can even grill em!
To be honest, it's actually a lot easier than you think, let me explain how to smoke or grill eggs.

Do not exceed 100°F. This will cook your eggs to fast and you will be left with a rubbery, chewy egg. The lower the temperature the better for cold smoking.

Cooking time does differ depending on how hot your embers are. So for a faster cook get your eggs buried first thing in the morning while the embers are still hot!
Boiling an egg is a simple task. However, there is a lot of debate over boiling times and when to place your eggs in the water.
Personally, I think that the eggs should be placed in cold water, so the eggs are covered by about 1 inch of water.
Set the cooked to medium high heat and once the water has reached a steady simmer, start your timer.
You want to maintain a steady simmer on your eggs, you don't want a rough boil. This can crack your eggs and leave you with a right rubbery mess.
Your egg white is cooked and solid, however the yolk is very running. Perfect for dipping buttery toast 'soldiers' into. To eat eggs this way it is best to sit them in an egg cup and slice open with the side of a tea spoon.
As well as a cooked egg white, the yolk is solid. It should be moist but dense. Served best as above or cut in half on a salad.
Both the white and the yolk are completely solid. The yolk will be light yellow and crumbly. These work best as a snack on the run or in devilled eggs. Recipe Below.

One of the easiest ways to hard boil and egg without the stress of keeping your eye on the egg timer is the 'boil and walk away' method.
This method is fantastic when you have a lot of cooking on the go or you need to have your concerntration on something else, like sports. For this method all you need to do is:
Place your eggs in cold water.
Bring to a brisk simmer.
Turn off the heat and leave eggs uncovered for at least 10 minutes and a maximum of 30 minutes.

See, eggs can be exciting and very, very tasty. I love leaving a bowl of smoked eggs in the refrigerator, they are the perfect snack.
