Wondering Where The NY Strip Comes From?

New York Strip steaks are cut from the short loin. It’s a tender cut because this muscle doesn’t get much of a workout. You might have heard of some other names for it; top sirloin or Kansas-style steak.

When buying a NY strip look for one that is well-marbled, with nice white streaks of fat throughout the steak. Also, make sure that the steak is at least 1.6 inches thick. All you’ll need for it your NY strip streak is some salt and cracked pepper.

What About The Cooking Time?

Cooking time for various degrees of doneness, depending on preference varies from person to person and it depends on how you like your steak.

Some people prefer their steaks medium-well while others might enjoy eating them rare. We like our new York Strip cooked at medium-rare. To grill it medium rare, it is done in about 6 minutes and one cooked rare takes 4 minutes

Rare– 2 minutes per side
Medium Rare– 3 minutes per side
Medium– 4 minutes per side
Well Done– 5 minutes per side

The timings above for NY strip steak are just a reference. It can vary due to;

  1. The temperature of your grill
  2. The thickness of the steak,
  3. How much heat your grill loses during turns
  4. The temperature of your meat.

Steps To Grilling New York Strip Steak

You can try reverse searing however we prefer grilling it on a super hot pellet grill.

The absolute best way to cook your NY steak is just a sprinkling of sea salt, cracked pepper, olive oil, and then getting your grill seriously hot!

Step 1: Bring your Steak to Room Temp and Tenderize

Allow at least 45 minutes for the steak to come to room temperature before cooking. Then you want to tenderize the NY strip steak, we have used salt as we have found in previous cooks that a dry brine leaves you with the most tender steak.

Step 2: Preheat your Grill

You need to make sure your grill is clean. Turn it on and once it’s hot you can give it a quick wipe with newspaper.

You should preheat your grill for about 10 minutes or until its 250° to 295°C

Step 3: Prep Your Steak

Then make sure you have seasoned both sides of your steak with some sea salt, cracked pepper, and olive oil. Give it a good rub into the meat.

Step 4: Add the Steaks to the Grill

After you have preheated your grill, place your steaks on it. You want to cook them over direct high heat.

Once you have placed them, don’t move them around. Let them cook on one side undisturbed until you can see that they are ready to be flipped. Around 3 minutes for medium-rare.
