What You Need For Grilled Oyster Blade Steak
- 10oz beef blade steak (1 inch thick)
- 2 Fresh King Prawns
- High-smoke cooking oil (we used vegetable or standard olive oil)
Steak Seasoning Rub Ingredients
- Tsp garlic powder

- Tsp cayenne pepper
- 1/2 tsp dried oregano
- Pinch of salt
- Pinch of black pepper

Oyster Blade Steak – What You Should Know
The oyster blade cut comes from the shoulder blade of the cow, its a cheaper cut and not the most tender piece when compared to prime areas like the loin. All you need to do is take some care during the prep stage then it makes a great alternative and is still packed with that delicious beefy flavor.
If you prefer to smoke steak, this oyster blade steak recipe will help you smoke and sear your steak like a grill master.

The trick is to keep it simple when grilling beef and it doesn’t change for this cut.
– Good flavors & liberal seasoning.
– Trim excess connective tissue & silver skin.
– High heat.
– Cook to medium rare for the best outcome.
What Temperature Do I Grill the Oyster Blade Steak?
The temperature when grilling needs to be the max!
If you’re using charcoal then buy the lump variety as it burns quickly and is very hot!
Don’t have a charcoal grill?
Turn the stove up or on the max setting and let your pan or skillet come to temp.
What Is the Cooking Time When Grilling Oyster Blade Steak?
A 1-inch thick oyster steak will take 1-2 minutes on each side for medium rare.
Why Is the Level of Doneness Medium?
I don’t want to tell you how to have the steak as it is your right!
But it is best to cook it to a medium level of doneness.
If you cook it for too long it can get tough.
If you cook it too quickly the fat or connective tissue will be chewy.
What Internal Temperature Does the Oyster Steak Need to Be?
The internal temperature for a medium beef steak is 160°F.
But remember the carryover cooking when resting!
Remove from the grill when the internal temperature is at 150°F.
How to Accurately Monitor the Internal Temp
A calibrated meat thermometer is your best friend.
Being sure food is cooked to an accurate level will do the following;
– Ensures the food is cooked properly to avoid food poisoning.
– Complete control over your dish.
– Helps you with timing prompts in the cooking process.
What to Serve With Our Oyster Steak ?
Below are some of my favorite sides for oyster blade steak
Grilled bread spread with mayonnaise for a delicious steak sandwich
Chunky wedges and peas.
Do I Need to Rest the Grilled Oyster Steak?
You should always rest your meat no matter what!
A thin piece of beef won’t need long but it makes all the difference.
Allowing the juices to be reabsorbed back into the meat proteins.
– Wrap in aluminum foil for 10 minutes.
– Monitor the temp on your probe until 160°F.
Preparing the Oyster Steak
– Source the steaks from a reliable butcher (preferably grass-fed)
– Ask for them to be cut to the same size.
– Ask him to remove the external silverskin and extra sinew.
– Remove the steaks from the refrigerator 15 minutes before cooking.
– Pat the steaks dry with a paper towel.
– Cover with oil and then the steak seasoning.
Making the Garlic Prawn Sauce (Optional)
– Place the butter in a cold saucepan.
– On low heat, gently melt the butter (avoid it going brown)
– Add the thinly chopped garlic when the butter comes to melt.
– Wait 1 minute until the garlic becomes fragrant.
– Add the cream and simmer (not boil) to reduce by half.
– Reduce by half & add plenty of freshly cracked black pepper.
– Add the prawns and cook for 2 minutes.
– Season to taste with salt & finish with fresh parsley.
Our Method for Grilled Oyster Blade Steak
Step 1: Heat The Charcoal Grill & Prepare The Steaks
– Prepare and light your charcoal grill and wait until white hot.
– Mix the above spice blend evenly in a grinder or bowl.
– While the coals are lit, prepare the steak as per the directions above.
Step 2: Grill The Oyster Blade Steaks & Start The Sauce
– Make the sauce as per the directions above.
Note: Remove the shell from the prawns if applicable.
– Insert the meat probes into the thickest part of your steaks.
– Place directly on the grill grates and underneath the coals (or hot pan).
– Fry for 1 minute on each side until an internal temp of 150°F.
Tip: Don’t move the steaks while they are grilling.
This seals the meat and forms a flavorful crust.
Step 3: The Resting Period
– Remove the steaks from the grill and wrap them in aluminum foil.
– Rest for 10 minutes or until the internal temperature reaches 160°F.
Step 4: Serve & Enjoy
– Cover the oyster blade steaks with your favorite sauce. We love using our mushroom sauce
– Serve straight away and enjoy a flavorful steak!
