Steak Seasoning Rub Ingredients

Instructions
Step 1: Heat The Charcoal Grill & Prepare The Steaks
- Prepare and light your charcoal grill and wait until white hot.
- Mix the above spice blend evenly in a grinder or bowl.
- While the coals are lit, prepare the steak as per the directions above.
Step 2: Grill The Oyster Blade Steaks & Start The Sauce
- Make the sauce as per the directions above.
Note: Remove the shell from the prawns if applicable.
- Insert the meat probes into the thickest part of your steaks.
- Place directly on the grill grates and underneath the coals (or hot pan).
- Fry for 1 minute on each side until an internal temp of 150°F.
Tip: Don't move the steaks while they are grilling.
This seals the meat and forms a flavorful crust.
Step 3: The Resting Period
- Remove the steaks from the grill and wrap them in aluminum foil.
- Rest for 10 minutes or until the internal temperature reaches 160°F.
Step 4: Serve & Enjoy
- Cover the oyster blade steaks with your favorite sauce. We love using our mushroom sauce
- Serve straight away and enjoy a flavorful steak!
