Another great thing about this dip is that you can use pre-cooked chicken or cook it on the stove, oven, or grill instead of smoking it. I like to smoke it to add more flavor, but it’s up to you. You can also cook this in your oven; I have included the method for that below as well.

  • Chicken breasts butterflied (you can use pre-cooked chicken; shred it before assembling the dip)
  • Buffalo Seasoning
  • Light cream cheese, softened
  • Greek yogurt
  • Hot sauce
  • Shredded cheddar cheese
  • Garlic powder
  • Celery salt
  • Kosher salt
  • Coarse black pepper
  • Spring onion

How to Make Traeger Buffalo Chicken Dip

Step 1: Cook The Chicken

You can either use precooked chicken and shred it or smoke your own. I will show you how to smoke and shred your chicken, but you are welcome to use either method. Smoking your chicken breasts will just give it a smokier flavor.

Preheat your smoker to 200°F (93°C). Season the chicken breasts generously with salt, pepper, and one tablespoon of buffalo seasoning.

Place the chicken breasts directly on the smoker grate (or on a tray if your smoker requires it). Smoke the chicken for 1 hour. Allow the chicken to cool for 10 minutes, and then shred it.

Step 2: Combine The Ingredients

Mix all the ingredients in a medium bowl. Set aside 1/2 cup cheddar cheese.

Pour the mixture from the mixing bowl into the baking dish. Top with the rest of the shredded cheddar cheese.

Step 3: Smoke the Dip

Place the baking dish on the grill grates. Smoke at 220°F for about 30 minutes until the dip is golden brown.

Using an Oven: Preheat your oven to 350°F. Once heated, place the dish in the oven and cook for 20 to 30 minutes until the top is golden brown and the dip bubbles.

Step 3: Finish the Dip

Let the dip cool. Garnish with sliced green onion. Serve with corn chips or celery sticks.

This recipe uses cheddar cheese and cream cheese. These classic cheeses are the best variety for buffalo dip.

However, you can substitute with other cheeses based on taste preferences. Or if you have different types of cheese on hand. Or if you want to take things up a notch.

Many people like blue cheese, mozzarella cheese, or Monterey jack cheese. Adding blue cheese crumbles is an easy way to add an extra layer of amazing flavor.

What Temperature to Cook Buffalo Dip at

Smoke the chicken buffalo dip at 220°F. This reasonably high cooking temperature will allow it to cook fairly quickly.

What Internal Temperature You Need to Reach

Since the ingredients are already safe to eat, there’s no safety temp to reach. However, you’ll want it to be hot enough to taste good.The cheese should melt and turn golden brown. Then you know it’s ready!

However, let it cool down a bit before eating it. Hot cheese dip can burn your mouth.

How Long to Smoke The Dip

Smoke the chicken buffalo dip for about half an hour. This should be long enough for the cheese to melt and for the smoke to infuse with the cheese.

Also, look for when the dip is golden brown. It’s probably ready to be removed from the pellet grill or oven

How To Store Leftovers

Refrigerate any leftovers in an airtight container. They should be good for a few days. You can also freeze the dip to save for later.

This dip can be eaten hot or cold. You don’t even have to heat it if you don’t want to!

My Favorite Wood Chips To Use
