What You Need for Smoked Carrots

  • 4 yellow carrots of the Chanteny variety (baby carrots work too)
  • Tbsp kosher salt
  • Tbsp black pepper
  • Tsp cayenne pepper
  • An of bunch fresh chopped parsley for garnish
  • 1 Tbsp unsalted butter (melted)
  • Dash of olive oil

Honey Glaze Ingredients (Per Serving)

  • 2 Tbsp good quality wild honey
  • 1 Tsp brown sugar
  • 1 Tsp maple syrup 
  • 1 fresh garlic clove (minced)
  • 1 Tsp onion powder
  • Dash of balsamic vinegar 
  • 100ml of water

Equipment

  • Traeger Electric Pellet Smoker
  • Light wood pellets (fruit variety like applewood or maple) 
  • Baking dish
  • Sharp knife or peeler 
  • Saucepan

Our recipe focuses on the Chanteny variety which is the most popular and widely grown.

But almost any smoking recipe or preparation for others can be used.

Don’t limit yourself!

Imperator Carrots

This variety tends to be long and slender. 

Slender carrots are best cut into uniform 1-inch pieces or ‘chips’

Roast on medium heat with light smoke for 25-30 minutes.

Enjoy roasted carrots as a crispy snack straight from the baking tray!

Baby Carrots

This variety is smaller and condensed in flavor.

Take advantage of the carrot flavor by infusing them with heavy smoke.

Wrap in a piece of bacon for the ultimate holiday dinner appetizer. 

Nantes Carrots 

The highest sugar content variety.

You won’t be needing to add extra sweetness like brown sugar or a honey glaze.

Smoke slowly with indirect heat and watch natural sugars bubble away!

How Do I Prepare The Carrots?

Slice the carrots with a peeler or knife to remove the skin. Wash in cold tap water and then leave to dry on a baking tray.

What Temperature Do I Set The Traeger Smoker?

You should smoke your carrots at 300°F for 60-90 minutes.

How Long Do You Need to Smoke The Carrots For?

At 300°F the cooking time will average at around 20-30 minutes.

What If I Don’t Have A Traeger Pellet Smoker?

A charcoal smoker or gas smoker will work fine, just be extra careful of the cooking temperature.

What To Serve With Our Delicious Smoked Carrots?

These make a great meat-free main meal with other roasted veg like sweet potato.

I like to serve this dish as a side to white meat. The sweet flavor works well with roasted turkey or pork.

Method for Smoked Carrots

Step 1: Prepare The Carrots

– Peel and wash the carrots.

– Try to keep them whole if they are of a similar size. (If not, then cut to the same size)

– Dry and then cover lightly with olive oil.

– Sprinkle the cayenne, salt, and black pepper.

– Add to a baking tray evenly apart.

Step 2: Make The Honey Glaze

– Make the glaze as per the above instructions.

Step 3: Smoking The Carrots

– Load the pellets, prime, set the grill temperature to 300°F, and wait until up to temp.

– Place the carrots at the bottom of the smoking chamber.

– Close the Traeger’s lid and wait 20 minutes.

– Open and check for soft consistency and a light char.

– Brush the glaze evenly over all of the carrots.

– Smoke with the lid open for a further 5 minutes.

Step 4: Butter Baske, Serve & Enjoy

– Remove the carrots and cover with foil for 2 minutes.

– While the carrots are resting, melt the butter in a pan.

– Cut the parsley and infuse with the butter.

– Pour the butter and parsley mixture over the glazed carrots.

– Enjoy!

Ingredients

Instructions

Making The Pepper & Fig Balsamic Glaze 

  • Add the water to a saucepan over low heat.
  • Add the honey, syrup, and sugar to the hot water.
  • Stir until the water reduces by half and is at a sticky consistency.
  • Add the garlic, onion powder, and balsamic vinegar.
  • Reduce further to a glaze.
  • Set aside.
