What you’re looking at is exactly what a grilled cheese should be — golden and crispy on the outside with cheese melted all the way to the edges. This recipe is perfect for a casual family lunch, an easy after-school meal, or a cold evening paired with a bowl of soup. It scales up easily, too, so whether you’re making two sandwiches or twelve, the method stays the same.
What You’ll Need to Cook
- Sourdough or thick-cut white bread — Look for slices at least ¾ inch thick to withstand high oven heat without burning before the cheese melts.
- Sharp cheddar cheese — Buy a block and slice it yourself; pre-shredded cheese contains anti-caking agents that can prevent a smooth, even melt.
- Gruyère cheese — This is what gives you that silky, stretchy pull. It melts far more smoothly than cheddar alone and adds a nutty depth of flavor.
- Unsalted butter — Softened to room temperature so it spreads evenly without tearing. Don’t swap for cooking spray — it won’t give you the same golden color.
- Dijon mustard
- Garlic powder
- Flaky sea salt


Ingredient Substitutes
Gluten-free bread: A thick-cut gluten-free loaf works well here — just watch it closely as it tends to brown faster than standard bread.
Cheese swaps: Fontina or Emmental can replace Gruyère with a similar smooth melt. Provolone works in place of cheddar for a milder, stretchier result.
Dairy-free butter: A high-quality vegan butter like Miyoko’s browns well and delivers good flavor without dairy.
How to Make Oven Grilled Cheese Sandwich
Step 1: Preheat the Oven and Pan
Set your oven to 425°F and slide a rimmed baking sheet onto the middle rack while it heats. Let everything preheat for at least 15 minutes. A cold pan means steamed, soft bread — the hot pan is what gives you that crispy, seared bottom crust right from the start.
Step 2: Butter and Build
Spread softened butter all the way to the edges of one side of each bread slice, then dust lightly with garlic powder and a pinch of flaky salt. Flip two slices over and spread a thin layer of Dijon on the unbuttered sides. Layer the Gruyère first, then the shredded cheddar, right to the edges of the bread — edge-to-edge coverage means edge-to-edge melt. Cap with the remaining slices, buttered side facing out.


Step 3: Bake and Flip
Carefully pull the hot baking sheet from the oven and set the sandwiches directly on it — you should hear a sizzle. Return the pan to the oven and bake for 5 minutes. Flip with a wide spatula; the bottom should be a deep amber gold. Bake for another 4–5 minutes, until the second side is golden brown and the cheese is fully melted.

How To Store Leftovers and Reheat
Let the sandwiches cool completely before wrapping them in foil or storing them in an airtight container — trapping heat creates steam and softens the crust. Refrigerate for up to 2 days.
To reheat, place on a wire rack set over a baking sheet in a 375°F oven for 8–10 minutes. Skip the microwave — it turns the bread rubbery and makes the cheese greasy instead of melty.

- 2 tbsp unsalted butter softened
- 2 oz sharp cheddar cheese sliced or grated
- 2 oz Gruyère cheese sliced or grated
- 1 tsp Dijon mustard optional
- ¼ tsp garlic powder
- Pinch of flaky sea salt
Instructions
- Preheat oven to 425°F with a rimmed baking sheet inside on the middle rack.
- Spread softened butter on one side of each bread slice, then lightly dust with garlic powder and a pinch of flaky salt.
- Spread a thin layer of Dijon mustard on the unbuttered side of two slices, if using.
- Layer the cheddar and Gruyère evenly across the mustard-side slices, covering edge to edge.
- Top with the remaining bread, buttered side facing out.
- Carefully remove the hot baking sheet and place the sandwiches directly on it.
- Bake 5 minutes, flip carefully, then bake another 4–5 minutes until deep golden and cheese is fully melted.
