First of all, you’ll want to start by making sure that your block of salt is completely dry. The reason behind this is that any hint of moisture can actually make the pink salt slab expand and even crack once it’s been heated. (Which you’ll want to avoid at all costs!) To dry the block you may want to use a dry towel. And if you don’t have one on hand, a paper towel will also work just fine.
Set the block on the flame for approximately 20 minutes on medium heat. Don’t expose the block to high heat immediately, as sudden exposure can also cause it to crack.
Then you want to prep your steak by tenderizing it. You can use citrus, a mallet, or just salt and pepper.
Next, cook your steak on the salt block to your liking. Use a proper meat thermometer to ensure that the beef is cooked to your preferred doneness.
After letting your meat rest for at least five minutes, your steak should be ready for plating and serving!
