Smoked Zucchini

This smoked zucchini recipe involves minimum prep and all you need to do is throw them in the smoker! Fresh zucchini spears are lightly tossed in olive oil and a delightful blend of seasonings. They are then carefully smoked until they reach a flavorful perfection, creating a mouthwatering dish.

- 2 tbsp Ground black pepper to taste
- 2 tbsp Kosher Salt
- 4 whole Zucchinis
- 1 tbsp Olive oil
Set the pellet smoker to 225°F.
Slice the zucchni into spears and then place in a bowl with the olive oil, salt and pepper.
Lay the zucchini on the grill grate and cook for 60 minutes. Then increase the temperature to 300°F and cook for a further 30 minutes.
Make sure you rotate around to get those fabulous grill marks across the slices. Flip over after 5-6 minutes.
You’ll know they’re ready when the flesh softens and the edges appear charred and brown.
Serve immediately. Garnish with red pepper flakes or fresh herbs.
