Ingredients
  

  • 4 whole medium sweet potatoes about 6-8 oz each
  • 2 tbsp olive oil
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika

Instructions
 

  • Preheat smoker to 225°F
  • Scrub sweet potatoes and pat dry
  • Rub with olive oil and season with salt, pepper, garlic powder, and paprika
  • Place on smoker grates and cook for 1.5-2 hours until tender
  • Check doneness by gently squeezing - they should give slightly
  • Remove from smoker and let cool for 5 minutes
  • Cut open and fluff with a fork before serving
