Ingredients

medium sweet potatoes
about 6-8 oz each

olive oil

kosher salt

black pepper

garlic powder

smoked paprika
Instructions
Preheat smoker to 225°F
Scrub sweet potatoes and pat dry
Rub with olive oil and season with salt, pepper, garlic powder, and paprika
Place on smoker grates and cook for 1.5-2 hours until tender
Check doneness by gently squeezing - they should give slightly
Remove from smoker and let cool for 5 minutes
Cut open and fluff with a fork before serving
