Smoked Carrots With Brown Butter

Equipment

  • 1 Pellet grill or smoker

Ingredients
  

  • Bunch of Carrots with tops attached
  • Melted butter
  • Sea salt
  • Ground black pepper
  • Fresh parsley chopped

Instructions
 

Step 1 - Preheat the Grill

  • Preheat the pellet smoker to medium heat of 275°F.

Step 2 - Prepare the Carrots

  • Wash and give the carrots a light scrub. Pat dry.
  • There's no need to peel the carrots.

Step 3 - Season the Carrots

  • Mix the melted butter, salt, and pepper in a mixing bowl.
  • Coat carrots in the mixture, avoiding the carrot tops.
  • Line a baking sheet with baking paper and arrange carrots in a single layer.

Step 4 - Smoke the Carrots

  • Place the baking tray on the smoker, in indirect heat.
  • Smoke until they are fork tender (about an hour).

Step 5 - Brown The Butter

  • In a small saucepan melt some butter. Stir until it turns brown and remove it from the heat. Serve the carrots with the butter on the side or you can brush it on the carrots.

Step 6: Serve The Carrotss

  • Garnish with fresh chopped parsley and serve as a side.
  • Serve and enjoy!
