- 2 cups cooked pulled pork warmed
- 8 slices sourdough bread
- 8 oz sharp cheddar cheese shredded
- 4 oz Monterey jack cheese shredded
- 4 tbsp unsalted butter softened
- 1/4 cup BBQ sauce
- 1/4 cup dill pickles sliced
- 1/4 cup thinly sliced red onion optional
Toss the warmed pulled pork with the BBQ sauce in a bowl until evenly coated.
Butter one side of each slice of sourdough bread.
Lay 4 slices butter-side down and layer with cheddar, pulled pork, red onion (if using), pickles, and Monterey jack.
Top with the remaining bread slices, butter-side up.
Heat a skillet or griddle over medium heat.
Cook the sandwiches for 3-4 minutes per side, pressing gently, until golden brown and the cheese has melted.
Remove from the skillet and rest for 1 minute before slicing.
Serve warm.
