Ingredients
  

  • 3- pound boneless pork loin
  • 1 tablespoon olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon honey
  • 2 teaspoons garlic powder
  • 2 teaspoon onion powder
  • 2 teaspoon smoked paprika
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • ½ teaspoon ground black pepper
  • 1 teaspoon kosher salt
  • 1 tablespoon fresh parsley finely chopped (for garnish)

Instructions
 

  • Preheat the oven to 400°F (200°C). Line a baking sheet with aluminum foil or parchment paper for easy cleanup.
  • Pat the pork loin dry with paper towels. In a small bowl, whisk together the olive oil, Dijon mustard, Worcestershire sauce, honey, garlic powder, onion powder, smoked paprika, rosemary, thyme, salt, and pepper.
  • Rub the seasoning mixture evenly over the entire surface of the pork loin, ensuring it is well-coated on all sides.
  • Place the pork loin on the prepared baking sheet, fat side up, and insert a meat thermometer into the thickest part of the roast. Bake in the preheated oven for 15 minutes at 400°F (200°C).
  • After 15 minutes, reduce the oven temperature to 375°F (190°C) and continue roasting for an additional 45-60 minutes, or until the internal temperature reaches 145°F (63°C). The pork should be golden and slightly crispy on the outside.
  • Remove the pork from the oven and tent it with aluminum foil. Let it rest for 10-15 minutes to allow the juices to redistribute. Slice the pork into 1-inch thick medallions.
  • Garnish with freshly chopped parsley for a burst of color and freshness. Serve with your favorite side dishes such as roasted vegetables, mashed potatoes, or a crisp green salad.
