After 15 minutes, reduce the oven temperature to 375°F (190°C) and continue roasting for an additional 45-60 minutes, or until the internal temperature reaches 145°F (63°C). The pork should be golden and slightly crispy on the outside.
Remove the pork from the oven and tent it with aluminum foil. Let it rest for 10-15 minutes to allow the juices to redistribute. Slice the pork into 1-inch thick medallions.
