Ingredients
  

  • 2 whole duck breasts skin-on
  • 2 tablespoons brown sugar
  • 1 tablespoon ground cumin
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Step 1: Make the rub

  • Mix the dry rub ingredients in a bowl. This includes sugar, cumin, paprika, garlic, onion, cayenne pepper, and oregano. Add kosher salt and black pepper to taste.

Step 2: Prepare the duck

  • Score the duck's skin in a diamond pattern with a sharp knife. Apply the rub liberally. Let the duck rest for 30-60 minutes.

Step 3: Grill the duck

  • Preheat the grill to 350°F. Place the duck skin-side down onto the grill. Cook for 7-9 minutes, the skin should be crispy and golden brown.
  • Flip the breasts and cook for at least 3-5 minutes. The internal temperature should reach 165°F.

Step 4: Finish the duck

  • Remove the duck from the heat and let rest for up to 10 minutes. Slice, serve, and enjoy!
