Ingredients
  

  • 2 lbs cod fillets
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 tsp salt

Instructions
 

  • Pat cod fillets completely dry with paper towels.
  • Brush cod with olive oil, then rub evenly with Cajun seasoning and salt.
  • Place seasoned cod on a wire rack set over an oven tray and refrigerate for 30 minutes.
  • Preheat grill to medium-high heat.
  • Place the entire tray with rack directly onto the grill grates.
  • Cook for 15-20 minutes, or until fish is opaque and flakes easily with a fork.
  • Remove tray from grill, let rest for 5 minutes, then serve.
