Instructions
Pat cod fillets completely dry with paper towels.
Brush cod with olive oil, then rub evenly with Cajun seasoning and salt.
Place seasoned cod on a wire rack set over an oven tray and refrigerate for 30 minutes.
Preheat grill to medium-high heat.
Place the entire tray with rack directly onto the grill grates.
Cook for 15-20 minutes, or until fish is opaque and flakes easily with a fork.
Remove tray from grill, let rest for 5 minutes, then serve.
