Ingredients
  

  • 4 whole fish fillets 6 oz each, cod, halibut, or mahi-mahi
  • 1 tbsp olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

For the Garlic Lemon Parsley Butter:

  • 6 tbsp unsalted butter softened
  • 4 cloves garlic minced
  • 3 tbsp fresh parsley finely chopped
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1/4 tsp sea salt

Instructions
 

  • Preheat your oven to 400°F and lightly grease a baking dish with olive oil or cooking spray.
  • Pat fish fillets completely dry with paper towels and arrange them in the prepared baking dish. Brush with olive oil and season both sides with salt and pepper.
  • In a small bowl, combine softened butter, minced garlic, chopped parsley, lemon juice, lemon zest and salt,, mixing until thoroughly incorporated.
  • Divide the garlic lemon parsley butter evenly among the fish fillets, spreading it generously across the top of each piece.
  • Bake uncovered for 12-15 minutes, or until the fish reaches an internal temperature of 145°F and flakes easily with a fork.
  • Remove from oven and let rest for 2 minutes. Spoon any melted butter from the pan over the fish before serving.
