Easy Airfryer Cheese Garlic Bread

I used to make garlic bread in the oven all the time, but the preheating alone put me off doing it on busy weeknights. The air fryer completely changed that. The outside crisps up beautifully, the cheese melts perfectly, and the whole thing is done before the pasta is even ready. If you’ve never tried it this way before, you’re in for a nice surprise.

What You’ll Need

  • Italian or French bread
  • Unsalted butter — Make sure your butter is properly softened to room temperature so it spreads easily without tearing the bread. Using unsalted lets you control the salt level yourself.
  • Fresh garlic cloves — Freshly minced garlic is non-negotiable for the best flavor. Pre-minced jarred garlic works in a pinch, but fresh gives a sharper, more aromatic punch that really comes through in the finished bread.
  • Shredded mozzarella cheese — Shred your own from a block if you can. Pre-shredded bags contain anti-caking agents that can prevent the cheese from melting as smoothly and evenly.
  • Parmesan cheese

Dairy-free option: Swap the butter for a plant-based butter alternative (such as Earth Balance or Miyoko’s) and use a dairy-free mozzarella shred. The melt won’t be quite as stretchy, but the flavor holds up well. Skip the Parmesan or use a vegan Parmesan-style topping.

Gluten-free option: This recipe works beautifully with a gluten-free baguette or Italian-style GF loaf. Just keep an eye on cook time — gluten-free breads can crisp and brown a little faster, so check at the 4-minute mark.

Cheese variations: Provolone or fontina can replace the mozzarella for a slightly richer, more complex melt. A mix of both mozzarella and provolone is particularly delicious if you want to experiment.

How To Make Air Fryer Garlic Cheese Bread

Step 1: Prep Your Garlic Butter

Start by bringing your butter to room temperature. Once soft, combine it in a small bowl with the minced garlic, garlic powder, chopped parsley, salt, and pepper. Mix it thoroughly until everything is evenly incorporated. Take a moment to taste the butter on its own — this is your chance to adjust the seasoning before it goes anywhere near the bread.

Don’t rush this step. The garlic butter is the backbone of the recipe, and ensuring the flavors are balanced here means the finished bread will be perfectly seasoned all the way through.

Step 2: Prepare The Bread

Halve your loaf lengthwise, spread the garlic butter generously and evenly across both halves, making sure you get all the way to the edges — those corners are where the best crispy bits will form.

Once the butter is on, layer the mozzarella evenly over each half. You want good coverage without piling it too thick in the center, as this can prevent even melting. Finish with a sprinkle of Parmesan and a light dusting of Italian seasoning over the top.

Step 3: Air Fry To Golden Perfection

Place the bread halves, cut side up, in the basket. Depending on the size of your air fryer, you may need to do this in two batches — don’t try to cram both halves in if they don’t fit comfortably, as overcrowding will result in uneven cooking.

Air fry for 5 to 6 minutes at 360°F. You’re looking for cheese that’s fully melted, bubbly, and starting to develop golden-brown spots, with the bread’s edges turning crispy and dark. Keep a close eye during the last minute. Once done, let it cool for about a minute before slicing and serving, so the cheese firms up just slightly and doesn’t slide off. Top with chopped parsley.

How To Store Leftovers And Reheat

If you somehow end up with leftovers (it doesn’t happen often!), let the bread cool completely before storing. Wrap individual slices tightly in foil or place them in an airtight container. They’ll keep in the refrigerator for up to 3 days.

To reheat, pop them back in the air fryer at 350°F for 2 to 3 minutes — this brings the crust back to life and remelts the cheese far better than a microwave, which will make the bread chewy and soggy. For longer storage, freeze wrapped slices for up to 1 month and reheat from frozen at 360°F for 5 to 6 minutes.
