Don’t be intimidated by the idea of stuffed pork chops! This recipe is surprisingly simple. You’re halfway there as long as you can butterfly a pork chop. Fill them with your favorite ingredients – I love bacon and cheese, but pesto, mushrooms, or even chili and pickles would be fantastic.

What You’ll Need
- Pork chops
- Yellow Mustard
- Barbecue rub
- Bacon
- Shredded cheese:
Cheddar/ Gouda/ Pepperjack cheese. - Cilantro
How to Make Grill Stuffed Pork Chops
Step 1: Prepare the bacon
Preheat the grill to 450°F, fry the bacon, let it cool, and dice it.
Step 2: Prepare the pork chops
Then you want to butterfly the pork chops, give the whole chop a rub with the BBQ rub and coat with mustard. One half of the chop place the cilantro, chopped bacon and cheese, then fold over and try with twine.
Step 3: Grill The Chops
Place the pork chops on the grill and cook each side for 4-5 minutes. Use a digital thermometer, and when they reach 145°F, remove from the grill and rest for 3-4 minutes.
How To Store Leftovers
Store the pork chops in the refrigerator. They can be refrigerated in an airtight container for 2-3 days. If you have a freezer-proof container, you can freeze the pork chops for up to a month.
Remainings can be reheated in the microwave, air fryer, or oven—just choose your favorite way to warm them up!
