How to Make BBQ Grilled Cheese
Step 1: Butter the bread
Using a butter knife, spread butter on one side of each slice of bread.
Step 2: Assemble the sandwiches
Put a piece of cheese on the unbuttered side of the bread and top with shredded cheese. Top with another slice of bread, butter side up.
Step 3: Grill the sandwiches
Preheat the grill to 275°F. Grill the sandwiches for 3-4 minutes until the cheese is melted. Flip over and grill for about 2-3 minutes. Both slices of bread should have golden brown butter.

I love using pepper jack cheese because it adds a kick of heat. For something a bit unique, you could try gouda or mozzarella.

A grilled cheese is perfect in its basic form. However, there are countless ways to amp it up!

What Temperature to Grill At
Smoke a grilled cheese sandwich at 275°F. This low to medium heat will allow the cheese to melt and the bread slices to crisp for about 3 minutes on each side.
Once the butter on top melts, you’ll know it’s about time to flip it. Once the cheese is melted, the sandwich is ready! The temperature is wrong if the bread is too soggy or burnt.
If the bread is too hot, it will burn before the cheese melts, and if it’s not warm enough, it will get soggy before it cooks.
